Soured wort production is a sensitive process that requires one thing above all in everyday brewing: stability. Our micro-soured wort systems enable the production of lactic acid fermented wort in a closed system – clean, controllable, and without unnecessary intervention. Developed in cooperation with Stiegl-Gut Wildshut, Bürkert Fluid Control Systems, and Alfred Gruber GmbH, the system is specifically designed for the requirements of breweries from 10–30 hl.
Automated soured wort system for stable processes
Heating, fermentation, and cooling are automated and precisely regulated via temperature and conductivity. A combined heating and cooling system ensures uniform conditions throughout the tank. The cylindro-conical design also allows for the targeted removal of inactive cells during the process.
Integrated CO₂ blanketing reduces the risk of contamination by mold and aerobic germs. In addition, a conductivity probe and Pt100 sensor monitor the medium directly in the tank, ensuring continuous control of all relevant parameters.
Easy operation of the soured wort system in everyday brewery life
Control is carried out via a SIMATIC touch panel with a clear user interface and predefined sequences. The system is designed for small breweries in the range of approx. 10–30 hl and can also be used for yeast propagation if required.
